Evidence that dark chocolate may play a role in cancer prevention is limited but growing. Some preliminary studies on three continents — Europe, Asia, and North America — have shown that people who eat many flavonoids or a lot of antioxidant-rich chocolate develop fewer cancers than those who don’t consume them. Of the many flavonoids in chocolate, two in particular, epicatechin and quercetin, are believed to be responsible for the cancer-fighting properties.

In addition to confirming the well-publicized high antioxidant ranking of such foods as cranberries and blueberries, the researchers found that Russet potatoes, pecans and even cinnamon are all excellent, although lesser-known, sources of antioxidants, which are thought to fight cancer, heart disease and Alzheimer's. The study appears in the June 9 print edition of the Journal of Agricultural and Food Chemistry, a peer-reviewed publication of the American Chemical Society, the world's largest scientific society.

Make your portion more powerful: A study in the Journal of Nutrition determined that the anti­oxidant ellagic acid (found in raspberries, pomegranates, walnuts, and cranberries) enhanced the ability of quercetin (an antioxidant found in apples, grapes, onions, and buckwheat) to kill off cancerous cells. What your dentist told you when you were a kid is true. “Oral bacteria love sugar just like we do, and when they feast on it, acid gets released as a byproduct,” says Dr. Sanda Moldovan, DDS. “This acid attacks the enamel of the teeth and allows bacteria to penetrate into the deeper layer of the tooth structure, called dentin.” The more sugar you eat, the more acidic the mouth becomes and the faster cavities develop. Plus, sugar feeds yeast growth, which might make the corners of your mouth or tongue red. “This also comes with a velcro-like feeling, or sensitivity to spicy foods,” she says. The sugar link is also a reason why diabetes is one of the diseases your teeth can reveal.

Studies on brain activity have provided evidence supporting the idea that overeating alters our brain’s reward system, which then further drives overeating. This same process is thought to underlie the tolerance associated with addiction. Over time, greater amounts of the substance are required to reach the same level of reward. Studies imply that overeating results in a diminished reward response and a progressively worsening addiction to low-nutrient foods rich in sugar, salt, and fat.
Antioxidant sources, like antioxidant foods, herbs, spices and teas, reduce the effects of free radicals, also called oxidative damage/stress, which plays a major role in disease formation. The leading health problems facing us today — including conditions like heart disease, cancer and dementia — have been linked to increased levels of oxidative damage and inflammation. In simplest terms, oxidation is a chemical reaction that can produce free radicals, leading to other chemical chain reactions that damage cells.
A study conducted at the University of Oslo in Norway compiled 3,100 food items using the FRAP assay method of measurement, which extracts the antioxidant value of foods and beverages with the scale of millimoles/100 grams. Millimoles are 1/1000 of a mole (a unit of measurement that allows the conversion between atoms/molecules and grams). Using this measurement, antioxidant values are compared on a scale. The FRAP assay is said to be an inexpensive and easy way to measure antioxidant content.
Luckily, increasing your daily antioxidant intake is pretty simple; they're found in many of your favorite fruits, nuts, veggies, and even sweets! Wondering where to find the most antioxidants? We combed through a database of more than 3,100 foods, drinks, herbs, and spices (originally compiled and published in Nutrition Journal in 2010) to find the top 10 antioxidant-rich foods (per 100 grams) that you need in your diet.

I only recommend buying and eating small amounts of minimally processed dark chocolate with a cacao content of at least 70 percent. This type of chocolate contains the most powerful antioxidants and the least amount of sugar. Thankfully, there are a lot of chocolate brands today that offer options that fits this 70 percentage minimum suggestion. The higher the percentage, the greater the potential health benefits of dark chocolate.
Dark chocolate's potent antioxidant content—along with some of the other mechanisms of nutrients—make it a treat for your immune system. Cocoa can modulate the inflammatory response of your immune system. Inflammation is tissue's response to pathogens, chemicals, wounding, or infections. Flavonoids are generally associated with anti-inflammatory properties, and chocolate is filled with them.
Aside from sunscreen, you may want to chow down on dark chocolate every day to protect your skin against harmful UV rays, according to research from the Journal of Cosmetic Dermatology. But not just any old dark chocolate—it needs to be specially produced with preserved high flavanol levels (manufacturing processes destroy the integrity of flavanols). 
An excerpt of the 425 spices and herbs analyzed in our study are presented in Table ​Table5.5. The study includes spices and herbs from 59 different manufacturers or countries. Twenty seven single products are in the range 100 to 465 mmol/100 g, but the variation is from 0.08 mmol/100 g in raw garlic paste procured in Japan, to 465 mmol/100 g in dried and ground clove purchased in Norway. Sorted by antioxidant content, clove has the highest mean antioxidant value, followed by peppermint, allspice, cinnamon, oregano, thyme, sage, rosemary, saffron and estragon, all dried and ground, with mean values ranging from 44 to 277 mmol/100 g. When analyzed in fresh samples compared to dried, oregano, rosemary and thyme have lower values, in the range of 2.2 to 5.6 mmol/100 g. This is also true for basil, chives, dill and parsley. In addition to common spices and culinary herbs, we have also analyzed other herbs, like birch leaves, wild marjoram and wood cranesbill among others. Details on all herbs can be found in Additional file 1, the Antioxidant Food Table.
Things get a little bumpy when the liver becomes full of glycogen due to excessive refined sugar consumption. When you eat too much sugar, the fructose levels build up, and the liver eventually turns them to fat. That fat can get stuck in the liver, which causes non-alcoholic fatty liver. An ongoing 40-year study on the effects of chocolate on cognitive function was recently finished. The study used data from the beginning of the study and compared it through cross-sectional study. This might not mean that chocolate makes people smarter—perhaps smart people happen to eat chocolate. Regardless, the study also concluded that all the types of intelligence measured previously were increased by chocolate consumption—along with spoken word recall. 
Currently, there are no government guidelines for consumers on how many antioxidants to consume and what kind of antioxidants to consume in their daily diet, as is the case with vitamins and minerals. A major barrier to such guidelines is a lack of consensus among nutrition researchers on uniform antioxidant measurements. Scientists will soon attempt to develop such a consensus at the First International Congress on Antioxidant Methods, held June 16-18 at the Caribe Royale Hotel and Conference Center in Orlando, Fla., with the ultimate goal of developing better nutritional data for consumers. Juicy and tart Montmorency cherries are your best source of the antioxidant melatonin. Other cherries have it, too, but Montmorency has the most. One of the immediate effects of sugar on the body is the release of more insulin, which regulates blood sugar. Soda is the worst culprit, says Vasanti Malik, ScD, a research scientist at the Harvard T.H. Chan School of Public Health. “Sugars in beverages are absorbed very quickly, which results in rapid increases in blood glucose and insulin,” she says. “Over time this can lead to insulin resistance [in which the body needs more and more insulin to be effective], and place an individual on a pathway to adverse metabolic health.” Naturally occurring sugars, as in fruit, don’t have the same negative effects because they’re paired with fiber, which helps slow absorption.
In Table ​Table44 we present an excerpt of the all the berries, fruits and vegetables analyzed. One hundred and nineteen berries and berry products were analyzed. The average antioxidant content of berries and berry products is relatively high with 25th and 75th percentiles being 1.90 to 6.31 mmol/100 g, respectively. There were 13 samples with especially high antioxidant capacity in this category, including dried amla (Indian gooseberry, 261.5 mmol/100 g), wild dried dog rose (Rosa canina) and products of dried dog rose with antioxidant contents in the range from 20.8 to 78.1 mmol/100 g. Dried wild bilberries (Vaccinum Myrtillus, native to Northern Europe), zereshk (red sour berries) from Iran and fresh dog rose (from Norway and Spain) have mean antioxidant contents of 48.3, 27.3 and 24.3 mmol/100 g, respectively. Other examples of antioxidant rich berries are fresh crowberries, bilberries, black currants, wild strawberries, blackberries, goji berries, sea buckthorn and cranberries. The least antioxidant rich berry products are some of the berry jams with mean values of approximately 0.5 mmol/100 g.

Many of us take the bait at the word “antioxidant,” buying health and beauty products without knowing exactly how these mysterious compounds actually benefit us. Let's clear that up: “Antioxidants act like little bodyguards to protect our cells from damage that can lead to premature aging and disease,” explains Cynthia Sass, Health’s contributing nutrition editor. They neutralize harmful free radicals, molecules that play a role in cancer, Alzheimer’s, heart disease, and more.
"She can have fresh fruit as the amount of fructose/glucose in fruit is not high. It's also bound in a food matrix, and with the fibre it contains it doesn't get absorbed like white granulated sugar," Catsicas said. "It does not cause high blood sugar and a corresponding insulin response. The portion size is important, though: only 100 to 150g fruit at a time and, as mentioned, only 1–2 portions per day."
