Dark chocolate may have something in common with carrots: Researchers from the University of Reading in England tested the eyesight of 30 healthy adults, 18 to 25 years old, after they ate white and dark chocolates. The subjects performed better on vision tests after eating the dark chocolate. It could be that the flavanols in dark chocolate, which improve blood flow to the brain, improve blood flow to the retina as well — and white chocolate doesn’t have nearly the same amount of flavanols as dark chocolate.
The category includes 52 products, including European, Scandinavian and American products. The variation in antioxidant content in dinner and dessert products for infants varies from 0.02 to 1.25 mmol/100 g. Interestingly, human breast milk (49 samples from Norwegian mothers) has a mean content of 2.0 mmol/100 g. In addition, the category includes two Norwegian dog rose products for infants with antioxidant contents of 6.7 and 18.5 mmol/100 g.
Another study published in 2015 titled followed the health of over 20,000 people for 11 years. The study concluded that “cumulative evidence suggests that higher chocolate intake is associated with a lower risk of future cardiovascular events” and that “there does not appear to be any evidence to say that chocolate should be avoided in those who are concerned about cardiovascular risk.” Among subjects who consumed the most chocolate, 12 percent developed or died of cardiovascular disease during the study compared to 17.4 percent of those who didn’t eat chocolate. (7) This doesn’t give anyone license to eat a chocolate bar each day, but it’s impressive that this large and lengthy study does appear to show a positive connection between chocolate consumption and heart health.
Sugar alcohols like xylitol, glycerol, sorbitol, maltitol, mannitol, and erythritol are neither sugars nor alcohols but are becoming increasingly popular as sweeteners. Prior says that the data should prove useful for consumers seeking to include more antioxidants in their diet. But he cautions that total antioxidant capacity of the foods does not necessarily reflect their potential health benefit, which depends on how they are absorbed and utilized in the body. Researchers are still trying to better understand this process, he adds.

They tested this by giving subjects different cough medicines. One group received common cough medicine with codeine; the second group received a solution of theobromine and the third group was placebo. They were exposed to capsaicin (the chemical responsible for making chili peppers spicy.) Their intention was to see how much capsaicin was required to induce five coughs. So if indulging in a bit of healthy dark chocolate should not only make it easy for you to stick to the small portion recommended for optimal health, but it should make it easier for you to stick to your diet in general. The aim of the present study was to screen foods to identify total antioxidant capacity of fruits, vegetables, beverages, spices and herbs in addition to common everyday foods. In nutritional epidemiologic and intervention studies, the Antioxidant Food Database may be utilized to identify and rank diets and subjects with regard to antioxidant intake and as a tool in planning dietary antioxidant interventions. The database will be available online at the University of Oslo's web site.
One of the immediate effects of sugar on the body is the release of more insulin, which regulates blood sugar. It’s very important with Cinnamon, Clove and Turmeric to not overdo it…too much Cinnamon is toxic in high doses and in high doses is also bad for the kidneys/liver (Ceylon Cinnamon is better than Cassia Cinnamon in this regard), too much Clove can burn the esophagus and be hard on the stomach lining and too much Turmeric is a blood thinner (so extra important to back off a week or 2 before any surgeries) and can exacerbate acid reflux. Turmeric also requires pepper and oil for the beneficial antioxidants to be absorbed into the body. It may be best to use these spices in “spice” quantities and not use as a supplement…a pinch, or an 1/8 t. or per the measurements called for in a recipe.
Cocoa is rich in plant chemicals called flavanols that may help to protect the heart. Dark chocolate contains up to 2-3 times more flavanol-rich cocoa solids than milk chocolate. Flavanols have been shown to support the production of nitric oxide (NO) in the endolethium (the inner cell lining of blood vessels) that helps to relax the blood vessels and improve blood flow, thereby lowering blood pressure. [1,2] Flavanols in chocolate can increase insulin sensitivity in short term studies; in the long run this could reduce risk of diabetes. [3,4]

Dark chocolate is high in calories (150-170 calories per ounce) and can contribute to weight gain if eaten in excess. However, chocolate, like nuts can induce satiety, so the longer term implications for weight control are not clear. It also contains a moderate amount of saturated fat, which can negatively affect blood lipid levels, though its heart-protective effects from flavanols appear to outweigh the risk. Choosing dark chocolate and eating modest quantities may offer the greatest health benefits.
