A study conducted at the University of Oslo in Norway compiled 3,100 food items using the FRAP assay method of measurement, which extracts the antioxidant value of foods and beverages with the scale of millimoles/100 grams. Millimoles are 1/1000 of a mole (a unit of measurement that allows the conversion between atoms/molecules and grams). Using this measurement, antioxidant values are compared on a scale. The FRAP assay is said to be an inexpensive and easy way to measure antioxidant content.
The FRAP assay of Benzie and Strain  was used with minor modifications that allowed quantification of most water- and fat-soluble antioxidants [16,17]. A Technicon RA 1000 system (Technicon instruments corporation, New York, USA) was used for the measurements of absorption changes that appear when the TPTZ-Fe3+ complex reduces to the TPTZ-Fe2+ form in the presence of antioxidants. An intense blue color with absorption maximum at 593 nm develops. The measurements were performed at 600 nm after 4 min incubation. An aqueous solution of 500 μmol/L FeSO4 × 7 H2O was used for calibration of the instrument. Validation of the assay is described in Halvorsen et al. 2002 . Briefly, the within-day repeatability measured as relative standard deviation (RSD) in standard solutions ranged from 0.4% to 6%. The between-day repeatability was < 3%. The variation in the values for replicate food items obtained from the same source were typically between 3 and 10 RSD%.
Dark chocolate may have something in common with carrots: Researchers from the University of Reading in England tested the eyesight of 30 healthy adults, 18 to 25 years old, after they ate white and dark chocolates. The subjects performed better on vision tests after eating the dark chocolate. It could be that the flavanols in dark chocolate, which improve blood flow to the brain, improve blood flow to the retina as well — and white chocolate doesn’t have nearly the same amount of flavanols as dark chocolate.

Among dark chocolate’s most researched benefit is its role in preventing heart disease. British researchers analyzed seven studies on chocolate and cardiovascular health involving more than 114,000 people in the United States, Germany, Japan, the Netherlands, and Sweden and found that people who ate more chocolate significantly reduced their risk for heart disease. Researchers concluded that people who ate the most chocolate weekly had a 37 percent lower risk of any heart disease than those who ate the least amounts of dark chocolate.

Every single one of us has both antioxidants and free radicals present inside of our bodies at all times. Some antioxidants are made from the body itself, while we must get others from our diets by eating high antioxidant foods that double as anti-inflammatory foods. A 2009 study published in the Journal of Nutrition demonstrated flavonoid-rich dark chocolate’s ability to improve cognitive ability, specifically in the elderly. This cross-sectional study of over 2,000 participants ages 70 to 74 years old looked at the relationship between the intake of chocolate, wine and tea (all rich in flavonoids) and cognitive performance. The study concludes that “intake of flavonoid-rich food, including chocolate, wine, and tea, is associated with better performance across several cognitive abilities and that the associations are dose dependent.” The researchers suggest that further studies should take into account other bioactive dietary substances in chocolate, wine and tea to ensure that it’s their flavonoid content that helps the brain so much. Good news for all chocolate lovers! Chocolate is actually quite healthy so no need to feel guilty indulging in your chocolate love every now and then. Dark chocolates and cocoa pack a big antioxidant punch and are rich in flavanols and polyphenols. A popular study conducted by Harvard experts and published in the online Journal Heart suggests that is actually good for your heart especially, the one with 70% cocoa. Too much chocolate can, of course, add to you daily calorific intake so moderation is the key here.
But since those antioxidants come with a generous portion of sugar, milk, and butter, chowing down on chocolate isn't an excuse to skip your workout. Chocolate and exercise actually work surprisingly well together: Another recent study, out of Australia this time, showed that eating chocolate high in healthy antioxidants reduced the blood pressure-raising effects of exercise on overweight individuals. So go ahead and reward yourself. A chocolate bar has five times the flavonoids of an apple, after all.
Antioxidants include dozens of food-based substances you may have heard of before, such as carotenoids like beta-carotene, lycopene and vitamin C. These are several examples of antioxidants that inhibit oxidation, or reactions promoted by oxygen, peroxide and/or free radicals. (1) Research suggests that when it comes to longevity and overall health, some of the benefits of consuming antioxidant foods, herbs, teas and supplements include:

Some of you may be surprised to find honey here. Although honey is a natural sweetener, it is considered a refined sugar because 96% of dry matter are simple sugars: fructose, glucose and sucrose. It is little wonder that the honey bear is the only animal found in nature with a problem with tooth-decay (honey decays teeth faster than table sugar). Honey has the highest calorie content of all sugars with 65 calories/tablespoon, compared to the 48 calories/tablespoon found in table sugar. The increased calories are bound to cause increased blood serum fatty acids, as well as weight gain, on top of the risk of more cavities.
It’s very important with Cinnamon, Clove and Turmeric to not overdo it…too much Cinnamon is toxic in high doses and in high doses is also bad for the kidneys/liver (Ceylon Cinnamon is better than Cassia Cinnamon in this regard), too much Clove can burn the esophagus and be hard on the stomach lining and too much Turmeric is a blood thinner (so extra important to back off a week or 2 before any surgeries) and can exacerbate acid reflux. Turmeric also requires pepper and oil for the beneficial antioxidants to be absorbed into the body. It may be best to use these spices in “spice” quantities and not use as a supplement…a pinch, or an 1/8 t. or per the measurements called for in a recipe.

It’s helpful to understand a little about how sugar is used by the brain. The carbohydrates you eat, including sugars, are broken down into glucose. Your brain needs glucose to function properly. Unfortunately, many people eat much more sugar than they need. According to the Department of Health and Human Services, the average American eats the equivalent of about 42 teaspoons of sugar a day. That added sugar comes from various sources, such as table sugar, baked goods, and sugary drinks.
"The bottom line is the same: eat more fruits and veggies," says Ronald L. Prior, Ph.D., a chemist and nutritionist with the USDA's Arkansas Children's Nutrition Center in Little Rock, Ark., and lead author of the study. "This study confirms that those foods are full of benefits, particularly those with higher levels of antioxidants. Nuts and spices are also good sources."
As I’m writing this article, there are already 75 scientific articles looking at dark chocolate and blood pressure. A study published in 2015 compared type 2 diabetics’ consumption of white chocolate versus high-cocoa, polyphenol-rich dark chocolate. The subjects consumed 25 grams (a little under one ounce) of dark or white chocolate for eight weeks. The researchers found that not only did dark chocolate lower the blood pressure of the hypertensive diabetics, but it also decreased fasting blood sugar. (10)
Another study published in 2015 titled followed the health of over 20,000 people for 11 years. The study concluded that “cumulative evidence suggests that higher chocolate intake is associated with a lower risk of future cardiovascular events” and that “there does not appear to be any evidence to say that chocolate should be avoided in those who are concerned about cardiovascular risk.” Among subjects who consumed the most chocolate, 12 percent developed or died of cardiovascular disease during the study compared to 17.4 percent of those who didn’t eat chocolate. (7) This doesn’t give anyone license to eat a chocolate bar each day, but it’s impressive that this large and lengthy study does appear to show a positive connection between chocolate consumption and heart health.

Also concentrated in broccoli are the carotenoids lutein, zeaxanthin and beta-carotene. But, the antioxidant which is the real standout in broccoli is indole-3-carbinol, a powerful antioxidant compound and anti-carcinogen found to not only hinder the growth of breast, cervical and prostate cancer, but also has been shown to boost liver function.
One of the effects of sugar on the body is that it could make your depression worse, according to research. “I like to tell my patients there’s a truth to the saying, ‘You are what you eat,’” says psychologist Deborah Serani, PsyD, award-winning author of Depression in Later Life. “High levels of sugar in the form of simple carbohydrates leads to spikes and crashes in glucose levels, which can worsen mood, increase irritability, agitation, irregular sleeping, and increase inflammation.” Instead, munch on lean protein, complex carbs, and foods with omega-3s, folate, and B vitamins.
